A Midwinter Warmup from the Sea

Capellinni Tutto Mare

1 ounce clarified butter
3 fresh scallops, U 10 size
Kosher salt; white pepper
3 Littleneck clams
5 Gulf shrimp, 26 – 30 size,
peeled, deveined, no tail
3 mussels
2 ounces sliced mushrooms
1 teaspoon minced garlic
2½ ounces lump crab meat
4 ounces white wine
4 ounces heavy cream
¼ cup Parmesan cheese
4 ounces angel hair pasta, cooked al dente
1 ounce chopped tomatoes

In a large skillet, on medium heat, heat butter until hot. This crucial step will allow a proper sear for the
scallops. While heating, generously season top of scallops with Kosher salt and white pepper. Place scallops
directly in hot butter, seasoned side down. Once they cook to golden brown, flip over. Add clams, shrimp
and mussels. Cook shrimp on both sides.

Halfway through add mushrooms, garlic and lump crab. When garlic turns white, add wine. Let reduce
until shrimp is cooked through. Add cream, ½ teaspoon kosher salt, ½ teaspoon white pepper and bring to
a boil. Turn down to low heat, let simmer 4 minutes. Add Parmesan and stir until Parmesan is melted. Let
simmer 1 more minute. Remove from heat.

Heat pasta in a pot of hot water. Strain and transfer to serving dish. Add tomato sauce, mix well. Arrange
large proteins on top of pasta and evenly poor rest of the sauce over pasta. Finish with shaved Parmesan.
